Wonderfully Tender Beef and Sauce over Noodles

  • 2-2 1/2 lbs boneless chuck roast (cubed)
  • 2 large onions
  • 3 TB butter, or less of oil
  • 1 can (8 oz) tomato sauce
  • 2 teaspoons sugar or a lesser amount of Splenda
  • 2 teaspoons paprika
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon garlic powder
  • 1 C (8 ounces) sour cream
  • Hot cooked noodles or rice
In a large skillet, brown meat and onions in butter or oil. Add the rest of the ingredients accept for the sour cream and noodles and bring to a boil. Poor into slow cooker and simmer on low for 3-4 hours. At mealtime, add sour cream, stir, and serve over hot cooked noodles or rice.


This is a favorite among all my boys--and they don't even like onions! But the beef is so tender and the sauce so delicious they can't resist. I make it often with what beef is on sale, like chuck roast, chuck steak, or stew meat. It can be thrown in the slow cooker long before the boys get home from school and it takes just minutes to cook the noodles or rice and add the sour cream at the last minute--great for soccer practice nights!
