Christmas Album Giveaway!

One Silent Night

Are you in the Christmas spirit yet?  FFH has recently released it’s first Christmas album and I’m loving it! 

Their rendition of Baby It’s Cold Outside is just plain fun.  Yet my favorite song is a new one titled The Birthday Of A King.  It’s a beautiful reflection on the birth of our Lord Jesus Christ.

They include a few classics, as well, such as I’ll Be Home For Christmas, O Come O Com Emmanuel, and O Little Town Of Bethlehem.

Apple Butter

A few weeks ago, I made some apple butter.  It was actually a slow cooker recipe.  But I did it a little differently, and it still came out delicious.

Instead of coring and pairing the apples and cooking them in the slow cooker, I simply washed, cut and cooked them with skins and cores in tact.  Once they were mushy, I put them through my strainer.  It saved me a lot of time on the prep end. apple butter 2

Then I added the sugar and spices to the sauce and dumped it in the slow cooker to meld the flavors for four or five hours.  

It was all I could do not to eat the whole batch before it was done cooking!  And the house smelled wonderful!!! 

Incidentally, I didn’t have any ground cloves, so I had to get creative with a hammer and strainer.  Lol!  You needed to know that, right?apple butter 3

Apple Butter

Ingredients:

  • @6 lbs of apples (I used Jonathans)
  • 2 Tablespoons vanilla
  • 1 1/2 cups of raw or brown sugar. 
  • 1 teaspoon ground cloves (I’m going to use less next time)
  • 3-4 teaspoons cinnamon

Peel and core the apples.  Cook in a slow cooker until mushy.  Then mush them up and add the spices.  Cook for a few more hours.

OR

Cut up the apples with skins and cores in tact.  Cook them on the stove till mushy, adding a dribble of water to the pan in the beginning, and stirring often.  Then put it through a strainer, add spices, and cook in a slow cooker for several hours. 

It will keep in the fridge for a few weeks.  Or you can freeze/can some.  Jars of apple butter would make wonderful Christmas gifts for teachers or anyone!  Just print off your own creative label and tie a pretty ribbon around the lid.

This is the first time I’ve made apple butter, and I was delighted with how easy it was!  It’s the perfect way to use up the great buys on apples this time of year.  :)

First, because every post is better with a picture, this was our house one morning last week.  I thought it looked very Christmas-y with the green spruces, the red fire bushes, and glittering frost.   

Speaking of Christmas, I can hardly believe how quickly the time is going!   With a few larger than normal gifts on my gift-giving list, I want to get the best bargains I can.  So I’ve been busy researching, price checking and deal hunting every chance I get. 

What would we all do without the internet?  Seriously!  Computers, smart phones, and handy-dandy applications have revolutionized the way we live, save and shop!

Free Library eBooks!  (Did you guess I love books?  Lol!)   Overdrive Media Console is a free application for your computer, smart phone or tablet.  It allows you to search, reserve, and download eBooks and audio books from you local library  directly to your device to read at your leisure!  You can learn more about it here

I was surprised to see that there were actually tons of titles available—including current best sellers!  At the end of the borrowing period, the book simply expires!  No lost books!  No late fees!  No last minute trips to return anything!  LOVE this!

On This Veterans Day

I was humbled when this post touched so many in 2010.  It’s one of the most honest and vulnerable posts I’ve ever written.  I still struggle with the fears I talked about.  In fact, listening to various tributes on the radio this morning, I found my heart and faith wrestling once again. 

So I decided to repost this in honor of all our soldiers, and the moms who hold them in their hearts.

Soldiers, Faith, And The Heart Of A Mom

My boys, like most, love to play army.  Especially my youngest. Sometimes he’s an army soldier, and sometimes he’s a storm trooper.  But he’s always on a mission.

This scene out my front door struck me the other day.  I’ve captured lots of pictures of the boys playing army.  But something about this one made me stop and watch.

Maybe it was because I caught a glimpse of a young man 15 years from now, far from his home and family.  Maybe because, in that instant, my heart ached for all the moms of soldiers far from home.  Moms who will always see those soldiers as their precious little children.

In today’s world, the chances that our children will serve (or be called to serve) in a military setting are real.

Thankfully, this soldier’s mission didn’t look too dangerous.  (The cats should probably watch their backs, though.)

But what about his future missions?

The truth is that we don’t know what the future holds for any of our children.  Only God does.  And if I’m honest with you, the thought of any of them facing dangerous missions on a real battlefield terrifies me.

And it rattles the mustard seed of my faith.

Because faith dictates that we trust God.

Trust him even with important things.  Especially important things.

Like our children. 

I can trust God for a lot of things.  But for my children’s health and safety?  In some ways that’s tough.  In fact, I’ll hold on to that job until the day I die with the ferocity and tenacity of a mamma bear.  Of course, I’ll pray.  That’s easy.

But it is incredibly hard to turn them over to God and present them, palms up, to His care. 

What if He takes them away from me?  What if His plan includes a dangerous mission or battle field, or a serious illness? 

I think it’s a struggle every mom faces.  And many are put to the test more than others. 

I haven’t been tried. 

At least not yet. 

Would I be able to hold my three sons out to God, palm up, and trust Him while they walk through difficult or dangerous situations?  Will I?

Even though my mind knows that there is no one more capable or loving than God, I think I would struggle. 

For now, at least, my little soldier’s eyes are still innocent.  I still get to tuck him in at night and hold him when he cries.  And I’m incredibly thankful for the safety in which we live, and the many blessings we enjoy.

What will he see

But for parents of real soldiers, fervent prayers take the place of tender hugs.  Let’s add our prayers to theirs.

Dear Lord,

Thank you for our soldiers.    

Guide their steps.  Protect them.  And bring them home safely when they are done their job. 

And may our faith in your loving and sovereign care be renewed every day.

Family Update

As we enjoy the last of the fall color show, the holidays are gearing up backstage!   I don’t know who I was kidding to think that after the fall rush, things would naturally calm down!  Lol!  That was a dumb thought!fall colors

Things never naturally slow down—especially at this time of year.  We barely get to put down the rake before we’re swept away by the holiday train.  We start making lists, searching sale ads, and filling up the calendar. 

If we don’t intentionally set those things aside, Thanksgiving gets lost in the shuffle.

So that’s what I want to do today.  I want to intentionally stop.  To take a breath.  And to just give thanks for the fall we’ve had!  That, and set the stage for this month of Thanksgiving. 

Things I am thankful for:

  • It’s been one of the most beautiful falls we’ve ever had.  The weather has been warm and the colors have been beautiful!
  • All three boys enjoyed a great soccer season!  Each of them grew  in their skills and their game.  We’re proud of their hard work.
  • The garden produced well!  We now have plenty of salsa, zucchini, and peppers that will be wonderful to use over the winter!
  • We’ve been blessed by the fellowship of a new small group.  Our study has been on “community” and how important relationships are to each of us in our daily walk.
  • The older boys have enjoyed our church’s new youth group format.  I’m thankful they are developing some great friends!
  • My little guy is enjoying school and he is well on his way to becoming a great reader!  I just LOVE sitting down with him to read and having him tell me, “YOU be quiet.  I want to do it.”  Lol!
  • And finally, I’m thankful that, in the midst of an uncertain economy, and an uncertain job market, my husband still has a job.  There have been times where we have felt an uncomfortable amount of uncertainty.  I think it’s God’s way of keeping us close to Him and seeking His direction!
