Tuna Surprise

  • 2 TBS Butter or margarine
  • 2 TBS Flour
  • 1 Cup milk
  • 1 can mushroom soup
  • 1 can tuna drained (we like the solid white)
  • 1 cup (more or less to taste) frozen peas
  • 2 hard boiled eggs, sliced
  • Hot noodles, rice, or toast

Make a white sauce by melting the butter in a large sauce pan, stirring in the flour, then slowly stirring in the milk. Heat, till it starts to thicken, then the add mushroom soup. Continue to heat on medium and add the tuna and peas. We like to add the hard boiled eggs at the last minute so they don't fall apart to nothing in the cooking process.

Serve over hot cooked noodles, toast, or even cooked rice.

Everyone should have a standby tuna recipe. My husband likes to call this tuna surprise, mainly because I've been known to toss in other things at the last minute, or shuffle around what we're putting it on!
